Old Tom Collins Cocktail 20c

Crisp and sparkling, with a hint of lemon and soda.
A gin highball built for sunshine and simplicity.

Ingredients

Biggar Old Tom Gin, lemon juice and simple syrup.

Instructions

The Tom Collins is best served in a long, tall glass, known as a highball.

1. Pour the cocktail (serves 2) into a cocktail shaker with ice
2. Shake vigorously for 15-20 seconds
3. Strain into a highball glass with plenty of ice in it, 
4. Top up with soda (you'll need to buy this separately)
5. Garnish with the provided lime wheel
   

Remember to have some soda water on hand for serving this.

History of the Tom Collins

The Tom Collins first appeared in print in the 1870s, but its true roots may lie earlier in England with a gin punch served by John Collins at London’s Limmer’s Hotel. Crisp, sparkling, and citrusy, it’s the ultimate easy-drinking highball.
